Here are the simple ingredients to make this smoothie bowl with a thick consistency and vibrant pink color:
- Frozen 100% organic pitaya, also known as dragonfruit - you can find dragonfruit packs in the frozen section of grocery stores. I used Pitaya Foods brand (not sponsored).
- Frozen banana - preferably an overripe banana that has been frozen for maximum sweetness. This contributes a creamy texture.
- 100% organic pure red dragonfruit powder is optional, but I love to add it to enhance the pink color.
- Almond milk - I like Califia unsweetened almond milk or I make my own.

What is Dragon Fruit?
Dragon fruit is a sweet tropical fruit from a night-blooming cactus (genus Hylocereus), native to Southern Mexico and Central America. It's also called pitaya, pitahaya, and strawberry pear.
The two most common varieties have bright red skin with green pointy scales that resemble a dragon, which accounts for the name. You can typically find the variety with white pulp with black seeds, although a less common type with red and black seeds also exists.
I've only seen the variety with white pulp with black seeds (Peruvian Apple Cactus), which grows in our backyard. A yellow one has yellow skin and white pulp with black seeds.

Substitutions
- Almond milk - You may substitute with another plant-based milk of your choice, such as organic soy milk, for more protein.
- Frozen pitaya - Can you find frozen dragon fruit cubes? If so, use a half-cup. If not, make this smoothie bowl with a frozen banana, ½ cup frozen mango, and ½ cup frozen raspberries or cherries. The resulting color will differ depending on the frozen fruit you choose. Cherries will make this smoothie bowl a magenta color.
- Vegan protein powder - instead, add chia seeds, hemp seeds, or greens such as spinach or kale. You can add some drained and rinsed beans, too! White beans, such as butter beans or naturally sweet adzuki beans, would be a good choice here.
Variations
- A splash of lemon or lime juice when mixing the smoothie
- A variety of frozen chopped tropical fruits
- Chia seeds, hemp seeds, or ground flax seeds
- Maple syrup, agave syrup, orange juice, or pitted dates for extra sweetness
How to Make This Vegan Dragon Fruit Smoothie Bowl
It's easy to make this pink pitaya smoothie bowl for a healthy breakfast! There's no need to go out to buy one at juice bars for $10 - $15 when it's this easy to make at home.
- Step 1: Break the frozen fruit into chunks.
- Step 2: In a high-speed blender combine frozen dragon fruit, mixed berries, frozen banana, almond milk, red dragon fruit powder, and vegan protein powder. Add a quarter cup of almond milk.
- Step 3: Start the blender at a low speed and gradually increase the speed. If necessary, use a tamper to push the fruit down into the blender and scrape the sides with the tamper. Add up to another quarter cup of almond milk or more for a creamy consistency.
- Step 4: Top with your choice of toppings, such as granola and fresh berries. Enjoy!

EQUIPMENT

INGREDIENTS

- 1 frozen banana broken into chunks
