What Is a Gin Fizz?
The gin fizz is a variation on sours, with gin fizz being the most well known. If you like sours, be sure to try this Classic Sidecar Cocktail which is a brandy sour.
A gin fizz features gin, citrus, sugar, and sparkling water. It's similar to a Tom Collins, which combines gin, lemon, sugar, and soda, except this gin fizz is frothier and bubblier since it is shaken with aquafaba. A Tom Collins is usually stirred and strained over ice.
A well-known variation of the gin fizz is the Ramos Fizz, which includes heavy cream and orange flower water.
Since I added aquafaba, this cocktail can be called a Silver Fizz. However, I call this cocktail a gin fizz since the aquafaba is optional.

Ingredients
You need a few simple ingredients to make this Strawberry Elderflower Gin Fizz.
- Aquafaba - this is bean water drained from a can of unsalted chickpeas, it is optional. To make this gin cocktail vegan, I replaced the traditional egg white with aquafaba to provide a frothy top to the drink.
- Ice cubes - to shake up in the cocktail shaker.
- Fresh strawberries - fresh, ripe, and sweet strawberries are the best!
- Gin - I used Empress 1908 Gin, micro-distilled in small batch copper-pot stills using eight botanicals: juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, butterfly pea blossoms, and the Fairmont Empress Blend Tea. It is an all-natural indigo hue from butterfly pea blossom added during distillation. Be sure to find Empress Gin near you!
- Fresh lemon juice - do not use lemon concentrate. Fresh lemon juice is essential to a gin fizz!
- Dry vermouth - this is a variation on the classic recipe, optional
- Elderflower syrup - This is readily available in my area. It mixes well with the botanicals in the gin. It's also available online.
- Sparkling strawberry water to fill the glass - use the brand of your choice.

Substitutions and Variations
- Sparkling strawberry water - use club soda or sparkling water of your choice.
- Lemon juice - use lime juice instead, although lemon juice is classic.
- Gin - if you don't care for gin, use vodka instead.
- Elderflower syrup - try simple syrup or hibiscus syrup. If you want less sweetness, try elderflower cordial or an elderflower liqueur.
- Aquafaba - if you don't have chickpeas, try a can of butter beans; unsalted is preferred. If you don't have either, it's okay to skip it for this gin fizz recipe.
- Fruit - Try blueberries or blackberries or fresh peaches instead of strawberries.
- Herbs - Muddle with the addition of fresh basil or mint, and garnish with basil or mint.
- Mocktail - skip the gin, vermouth, and bitters; replace with sparkling water or club soda. Try this Blue Lagoon Mocktail or Sparkling Cranberry Mocktail for a non-alcoholic beverage.

How to Make a Strawberry Elderflower Gin Fizz
This delicious and refreshing cocktail is easy to make; it is perfect for brunch, cocktail hour at home, or lounging by the pool. I'll be sipping on this refreshing Strawberry Elderflower Gin Fizz all summer long!
Have all of your ingredients lined up next to a cocktail shaker.
- Step 1: Measure the aquafaba (chickpea water) and shake it with an ice cube in a cocktail shaker for one minute. Then set the aquafaba aside in another container.
- Step 2: Make a fresh strawberry puree. Place the chopped strawberries at the bottom of a cocktail shaker and muddle them gently. If you don't have a muddler, use the tip of a French rolling pin, the clean handle of a mortar and pestle, or the tip of the handle of wooden spoon.
- Step 3: Add the shaken aquafaba, gin, fresh lemon juice, elderflower syrup, and bitters to the cocktail shaker. I love this hybrid cocktail shaker because my hands don't get cold!
- Step 4: Add a cup of ice to the shaker and shake for one minute.
- Step 5: Strain the mixture into a chilled Collins glass.
- Step 6: Fill the glass with sparkling strawberry water. Garnish with a sliced strawberry, and serve immediately. Happy sipping!
Tip: For a thick layer of foam from the aquafaba, don't add ice to the glass. Also, shake vigorously!
Expert Tips
Fresh, quality ingredients make all the difference! Use a quality gin; I love the botanical flavors and gorgeous natural color of Empress 1908 Gin.
Taste the strawberries to make sure they are sweet. It's okay if they are a bit overripe; that is preferable to a tart, underripe strawberry.
