Ingredients
Making this dairy-free strawberry milk is so easy, and you probably already have most of the simple ingredients in your kitchen! Here's what you'll need:
- Fresh Strawberries - I used organic berries for the best fresh strawberry flavor. If they're out of season, frozen strawberries are a good alternative. Just be sure to thaw them first-unless you're making a thicker smoothie version!
- Cashews - I use organic, unsalted cashews for a creamy base. If you don't have cashews, substitute with any non-dairy milk of your preference (see substitutions below).
- Medjool Dates - These are naturally sweet and perfect for adding sweetness without refined sugar.
- Sea Salt - Just a pinch helps bring out the natural sweetness of the strawberries.
- Vanilla Extract - Optional, but it adds a lovely depth of flavor!
For detailed quantities, check out the recipe card.
Substitutions & Variations
- Cashews - You can swap the cashews for your favorite plant-based nut milk, like almond milk. Or use Oat milk or soy milk, which are thicker and creamier than almond milk. If you like coconut, try lite coconut milk, which would work as well.
- Dates - If you can't find dates, feel free to substitute with maple syrup, coconut sugar, or date syrup.
- Deluxe - Add whipped coconut cream on top and garnish with a sliced strawberry for a special touch.
- Flavor - Add a pinch of cardamom, cinnamon, or nutmeg for a fun flavor twist.
- Milkshake - For a creamy treat, blend in a scoop of vegan vanilla ice cream and turn this into a creamy vegan strawberry milkshake!
- Strawberries - Fresh strawberries are best, but frozen ones work too-remember the drink will be thicker. You can experiment with other fruit, such as raspberries, blueberries, or bananas.
- Vanilla Extract - Skip it, or try a dash of almond extract for a slightly different taste.

How To Make Vegan Strawberry Milk With Cashews
This homemade strawberry milk recipe is a breeze to make. Here's how to make this simple recipe:

- Step 1: Pour a half cup of boiling water over the cashew pieces in a small bowl. To save time, you can do this the day before and store the bowl in the fridge overnight.

- Step 2: Drain and rinse the cashews with fresh water. Place the cashews in a high-speed blender. A Vitamix or similar blender works best. I've had mine for years, and it's still going strong!
- Step 3: Add the rinsed, halved fresh strawberries, pitted dates, vanilla extract, and a pinch of salt. Add ice cubes if desired. I skipped this step since my ingredients were cold.

- Step 4: Blend for approximately 30 seconds. Drink immediately or refrigerate promptly. The strawberry milk may separate a little in the refrigerator; stir before serving.
Storage
Store any leftover strawberry milk in an airtight container in the fridge for up to 2 days.
Expert Tips
- To save time, soak the cashews the day before and store them in a bowl in the fridge overnight.
- The strawberry milk may separate a little in the fridge-no worries! If this happens, give it a quick stir before serving.
Recipe FAQs
If you don't have a high-speed blender, you can still make delicious vegan strawberry milk with a regular blender or a food processor. Alternatively, you can cook the strawberries with a sweetener to create a syrup, then mix it with your choice of plant-based milk for a smoother consistency.
Frozen strawberries are a great alternative to fresh strawberries since they're picked at peak ripeness. Keep in mind that using frozen strawberries may result in a thicker consistency, so you should adjust the amount of plant-based milk to achieve your desired texture.
