Why You'll Love This Recipe
- Roasting green beans brings out their flavor with caramelization.
- It only takes a few simple ingredients to make this great side dish.
- This healthy recipe is quick and easy. You can even throw these green beans together at the last minute for a dinner party without feeling rushed.
Ingredients

You need basic ingredients you can find at the local grocery store to make this roasted green bean recipe:
- Green beans or Haricots verts-Choose firm green beans without blemishes or dark spots. Gently pat dry with a clean kitchen towel after rinsing. Trim them by lining them up side by side and cutting off the stem ends, which are the fibrous ends. I don't cut both ends of the green bean, but you can if you wish.
- Fresh garlic - If you love garlic, feel free to add more garlic. I don't recommend using the pre-chopped garlic that comes in a jar; the pieces are too small and have too much moisture.
- Extra-virgin olive oil - Use fresh, high-quality extra-virgin olive oil suited for heat and cooking.
- Sea salt and freshly ground black pepper to enhance the flavor. Feel free to adjust the amounts to your taste.
A full ingredient list with exact amounts can be found in the recipe card below.
Substitutions
- Green Beans - If you don't have fresh green beans, frozen ones work, too, although fresh green beans will yield the best results. Thaw frozen green beans and dry them thoroughly before roasting to avoid excess moisture.
- Olive Oil - For a slightly different flavor, swap olive oil for avocado or refined coconut oil.
- Garlic - Garlic powder will work in a pinch; use about ½ teaspoon. Or use roasted garlic. If you're not a fan of garlic, skip it.
Variations
- Spice - Add a pinch of red pepper flakes for some heat, or toss the roasted green beans with Calabrian red chile paste before serving.
- Acidity - Squeeze fresh lemon juice and lemon zest over the roasted beans just before serving for a bright, zesty flavor, or drizzle with a balsamic reduction.
- "Cheesy" - After roasting, sprinkle freshly grated vegan Parmesan cheese or crumbled vegan feta over the beans while they're hot. Or add a handful of grated vegan Parmesan ( I like Violife) just after you add the garlic while roasting.
- Nuts - Add chopped toasted pine nuts, hazelnuts, walnuts, or almonds before serving.
How To Make Roasted Green Beans With Garlic
It's easy to make this garlicky green beans recipe:

- Step 1: Preheat the oven and lightly oil a sheet pan. Place the green beans on the baking sheet in two rows.

- Step 2: Drizzle the green beans with olive oil and gently roll them with your hands until they're evenly coated with the olive oil.

- Step 3: Roast the green beans for 15-20 minutes, shaking the pan every 5 minutes, until they become tender and lightly browned in areas. Flipping them with a metal spatula helps them caramelize evenly. The green will sizzle and release moisture while they roast.

- Step 4: Add the chopped garlic to the green beans. Roast for another 2-3 minutes until the garlic turns golden; flip the beans with the garlic if more time is needed. If you have bigger green beans than the ones I used, they will take a few minutes longer to cook.
Note: Thin haricot verts will cook faster than larger green beans.

- Step 5: When the roasted green beans with garlic are ready, remove them from the oven and transfer them to a bowl. Sprinkle with salt and pepper, seasoning to taste. Serve immediately while still warm.
Expert Tips
Here are a few tips when making this delicious side dish:
- Don't overcrowd the pan - To ensure your green beans get that perfect roasted texture, ensure they're in a single layer. Overcrowding will cause them to steam instead of roast. If you make a double batch, use two sheet pans.
- Flip the beans - Tossing them halfway through cooking helps them cook evenly on all sides.
- Watch the garlic - I add the garlic a few minutes before the green beans are done to prevent burned garlic. Dark brown garlic will be bitter, so observe it during the last few minutes. The garlic should be golden before you remove the green beans from the oven.
How To Serve
These roasted green beans are versatile and can complement a wide range of dishes. Here are some ideas for serving them:
- With Plant-based Protein - Serve these garlicky green beans alongside grilled tofu or cooked cannellini beans or legumes and Rice Cooker Cilantro Lime Rice for a balanced and satisfying meal.
- With Pasta - Pair them with a simple pasta dish like Vegan Asparagus Mushroom Pasta, Vegan Creamy Mushroom Pasta, or Vegan Creamy Pasta With Peas.
- In a Bowl - Add them to a grain bowl with quinoa like this Southwest Quinoa Bowl, roasted vegetables, and tofu or tempeh for a wholesome, vegetable-packed meal. The green beans provide a nice pop of color and flavor.
- With Holiday Dinners - These green beans make a great addition to holiday meals like Vegan Meatloaf and Stuffed Carnival Squash. They're a lighter option that pairs well with heavier dishes like mashed potatoes and stuffing.
- As a Snack - Believe it or not, these roasted green beans are so good you can eat them straight from the pan! They are delicious topped with Coconut Bacon. You might also enjoy them with Air Fryer Shishito Peppers and Vegan Cheesy Kale Chips at aperitivo hour with an Aperol Spritz.
Storage
- Refrigerator - Refrigerate leftover roasted green beans in an airtight container for up to 3 days.
- Reheating - Reheat them in a preheated 350°F oven for about 10 minutes or until warmed.
Recipe FAQs
Yes, you can. However, enjoying these green beans fresh out of the oven is best. If you make them ahead of time and reheat them, they will become softer, though they'll still taste delicious.
Fresh green beans are best for this recipe. Thaw and dry them well before roasting, if you must use frozen. Frozen green beans are already trimmed.
Feel free to get creative! Smoked paprika, sriracha, Italian seasoning, Herbes de Provence, a drizzle of balsamic glaze, or a sprinkle of chopped nuts after roasting would be tasty additions.
Yes, cook these in the air fryer at 400°F for 15-20 minutes, shaking the basket every 5 minutes. Cook the green beans until they start to turn brown.
