Combine the organic turbinado sugar and filtered water in a small saucepan on medium-low heat. Occasionally stir until the sugar dissolves.
Let the syrup cool to room temperature before storing it in the refrigerator in an airtight container for up to 4 weeks.
For the Blueberry Bourbon Smash
Place 9 blueberries, 6 mint leaves, turbinado simple syrup, and lemon juice in a cocktail shaker and muddle gently.
Add the bourbon and several ice cubes. Shake vigorously for 20 seconds.
Add a few cubes of ice to a glass. Remove the top of the cocktail shaker and pour everything into a double old-fashioned glass. Add additional ice.
Pour club soda on top. Stir and garnish with mint leaves, 3 blueberries on a cocktail stick, and a lemon wedge, if desired. Serve immediately.
Notes
Don't strain this Blueberry Bourbon Smash for the best sipping experience. Serve this Blueberry Bourbon Smash in a double old-fashioned glass so you have plenty of room for ice. After pouring the drink into the glass, I like adding a few ice cubes before topping it with club soda. Remember to stir!
Clap the mint before garnishing the cocktail to release the oils and fragrance from the mint, enhancing the cocktail experience.
Adjust the amount of turbinado simple syrup to your taste. If your blueberries are sweet, you may not need as much syrup; try ½ oz. If you like drinks on the sweet side, you may want to increase the amount to 1 oz.
