1poundorganic yellow waxy potatoes, Yukon Goldscrubbed & cut into 1-inch pieces, soaked in water for 1 hour if you have time, & dry the potatoes with a lint-free towel, or use russet potatoes
1teaspoonextra virgin olive oilor avocado oil or grapeseed oil
Toss the potatoes with olive oil. Then toss them with fine sea salt, smoked paprika, and freshly ground black pepper.
Spray the air fryer basket lightly with avocado oil spray. Place the seasoned potatoes in the air fryer basket and cook for 20 minutes, shaking the tray after 10 minutes and again 5 minutes before they're done.
Serve immediately once the potatoes are done. They should be crispy on the outside and soft on the inside.
Notes
The cooking time and temperature will vary depending on your air fryer, as well as the amount of potatoes and the size of the potatoes once chopped, and how evenly sized the pieces are. Taste the potatoes for doneness before serving.
