Rossini Cocktail

The Rossini cocktail is a twist on the classic Bellini. It’s made with fresh strawberry puree & Cava, making it perfect for summer brunch!

Strawberries Simple Syrup Lemon Juice Chilled Cava 

Ingredients

– Fine mesh strainer – Food processor – Champagne flutes

Equipment

RESPLENDENT KITCHEN

Place strawberries, simple syrup, and lemon juice in a food processor. Process for several seconds until pureed. Strain the mixture.

Make the strawberry puree

RESPLENDENT KITCHEN

Pour 2 tablespoons of strawberry puree into a chilled champagne glass.

Make the Rossini cocktail

Pour the Cava into the glass. Tilt the glass when pouring slowly to avoid overflow.

Garnish with a strawberry slice.
