Vegan Pretzel Bites

Ingredients

– bread flour – warm water – cane sugar – active dry yeast – fine sea salt – plant-based butter – extra virgin olive oil – pretzel salt – baking soda/water

Equipment

– mixing bowls – cutting board – medium saucepan – 2 rimmed baking  sheets – parchment paper – fry ladle – bench scraper – bread whisk

Pour warm water into a large bowl and stir in the sugar and yeast on top. Let rest. Add melted butter and salt to the bowl, and mix.

Stir the bread flour in slowly. Mix until everything is combined. You can do this in a KitchenAid mixer bowl instead.

Knead the dough on a clean surface such as a wooden board or a marble countertop for five to eight minutes or use a KitchenAid mixer.

Place round dough ball into a large bowl. Cover with plastic wrap or slightly damp kitchen towel.  Let  dough rise in a warm place for up to 90 minutes until the dough has doubled.

Make the baking soda bath per the recipe. Cut the dough ball into six pieces, and make a dough rope from one of them.

Cut the rope into  8 to 11 pieces. Place the cut pieces of dough from one rope into the baking soda bath. Boil for approximately 30 seconds.  Place on prepared baking sheet.

Repeat until your baking sheet is full. Garnish with pretzel salt before baking for 15 minutes. ENJOY!
