When are plums in season? Plums are in season typically from late June through September.

- fresh plums - flaxseed meal - almond & spelt flour - oil - vegan butter - vanilla & almond extract - sugar - almond milk - baking powder - preserves  - creme de cassis

Ingredients

- Preheat the oven to 350°F.  - Grease the cake tin with vegan butter and line the bottom with parchment paper, greasing both sides of the  parchment paper.

- In a large bowl, beat the softened butter and sugar for a few minutes, until light and creamy. - Add flaxseed meal mixture and beat until mixed.

- Add the remaining liquid ingredients, and beat for a minute until mixed. - In a medium mixing bowl, sift the dry ingredients.

Step 3

- Add the dry ingredients to the liquid ingredients and mix on low speed until incorporated. - Pour the batter into the prepared cake pan.

- Layer plum slices in a circle, starting outside and moving toward the  middle.  - Sprinkle with sugar - place the cake pan in the oven and bake.

- Bake until the cake is slightly puffy and brown on top.  - Stick the tip of a toothpick in the center; it  should have a few crumbs on it.

Step 6

- Once the cake has baked long enough, let it cool on a cooling rack for 20 to 30 minutes. - Top with preserves & creme de cassis if desired.
